We sourced our new filter coffee from two small-scale farms, San Antonia and Vista Hermosa in San Antonio, Peru. Farmers in this region produce very small lots of coffee, often working together to harvest and process coffee cherries, producing a delicate and complex flavour profile. This is the second year we’ve selected coffees from farmers in San Antonio, once again charmed by the delicate sweetness unique to the region. We’re proud to support the development work that Union Hand Roasted Coffee has achieved through their direct trade program to improve famers access to fair pricing for producing higher quality coffee.
We are always looking for coffees that are naturally sweet, have a pleasant acidity and a lingering finish. We select our Filter coffee in a cupping session – where coffee is roasted and ground to strict specifications that expose the true character of the coffee. For this season, we selected two lots we felt would blend to achieve the flavour profile that suits our food – and our customers – best. We developed the roast to amplify the fruit character and sweetness.
We are loving the roasted apple, caramelised walnut and milk chocolate notes in this coffee. The sweet yet fruity character is refreshing and adds complexity. Notes of milk chocolate and caramel coat the tongue and linger on in the finish. It’s more-ish and satisfying, increasing in sweetness as it cools. We think this coffee is the perfect accompaniment to our flaky pastry so we love to drink it with a croissant or a cinnamon bun in the morning.
