Inspired by the French ‘mont blanc’ pudding, we mix very dark chocolate (a mixture of 70% and 100% cacao solids chocolate) and custard with mascarpone and top it with chestnut puree and cream. Capped off with home made candied orange zest. The base is our spelt, almond and pistachio crumble.
