Our buttermilk crackers topped with grated Quicke’s clothbound cheddar off-cuts and cracked black pepper. Normally, when baking with cheese, it is common to use young and creamy cheese. We chose to use aged cheese which is typically drier and stronger in flavour. In line with our goals to reduce food waste, we are finding interesting new ways to use surplus pieces of cheese left over from the cheesemaking process, and the flavour of these crackers reminds us the forgotten cheese bits melted on to the grill and cooked over and over again.
