  • Muhammara

Originating from the ancient city of Aleppo, Muhammara is a bold and vibrant spread with smoky roasted red peppers, toasted walnuts and a blend of heady spices. It has a rich and complex flavour profile.

  • Agrodolce

A sweet and sour condiment that captures the essence of Italian culinary traditions. Caramelised onions and aged balsamic vinegar are often used to lend a depth of flavour, while the tangy notes of currants and red wine vinegar evoke the warmth and abundance of the Mediterranean.

  • Ezme Paste

A vibrant and lively Turkish spread that adds a touch of excitement to any dish. Made from sun-ripened tomatoes, fiery peppers and pomegranate molasses.

  • Superstraccia

By marrying modern techniques with simple, natural ingredients (something we know a thing or two about at GAIL’s), our friends at Julienne Bruno have made the plant-based option the most exciting choice with their exquisite Superstraccia, a plant-based cheese with rich creamy curds.

  • Spelt Berries

Spelt is an ancient grain with a distinctive, naturally nutty flavour, first known to have existed in Britain as a main crop in 2000 BCE. We use Sharpham Park Farm’s small and perfectly formed spelt berries, grown sustainably on the Somerset Levels. With organic farming and provenance at the forefront, Sharpham Park Farm uses traditional milling methods to preserve the grain’s nutrients and deliver exceptional freshness and taste. These are grains that are cultivated with care and rooted in heritage.

  • Lentil Hummus

Arguably one of the best dips for crisps, making our hummus from lentils adds an exciting dimension and twist to the traditional dip. Bringing a rich and earthy taste that elevates the hummus experience.

  • Miso

A deeply flavourful Japanese ingredient with an umami-rich profile, miso brings a unique savoury note to dressings, while also providing probiotic benefits.

Vibrant and crunchy julienne rainbow slaw dressed with a creamy miso, tahini and almond dressing, finished with a sprinkle of spicy seeds.

2. Spelt, Cauliflower & Ferments Salad

Sharpham Park Farm spelt berries tossed in Agrodolce, paired with Eaten Alive ferments, topped with spinach, gently spiced roasted cauliflower and lentil hummus.

3. Courgette & Muhammara Salad

Fresh and vibrant salad of raw courgette with lemon juice, oregano, peas, rocket and Kalamata olives. Served with plant-based spread Superstraccia from our friends at Julienne Bruno and Syrian-inspired dip Muhammara from Natoora, made with pepper, cumin and walnut.
